You and your partner will discover flavor pairings and techniques for adding warmth, depth and heat to the table. Learn to poach chicken in aromatics so it comes out flavorful and moist, and practice toasting spices to create the rich, complex flavors for a traditional Oaxacan mole to accompany your entree. For sides, you’ll oven-roast veggies for a fresh salsa and dial in the proportions for guacamole, to accompany homemade tortilla chips you fry yourself.
