Easter Brunch at Hyatt Regency Hill Country
It will feature an assortment of breakfast favorites including scrambled eggs with sundried tomatoes, smoked jalapeno cheddar sausage, and a peach cobbler French toast, as well as gourmet salads, artisanal cheeses and charcuterie, and a raw bar featuring mini lobster rolls, smoked salmon, and citrus-marinated poached shrimp.
Entrees will include smoked Berkshire ham with maple mustard glaze, sumac-crusted smoked leg of lamb, and herb-seared salmon with grapefruit salsa. The meal will also include an array of house-made desserts such as carrot cake with cream cheese frosting, blueberry lemon sweet tarts, mini butterscotch and strawberry cheesecakes, and more.

Overnight guests and brunch diners will also have access to a variety of family-friendly activities including Easter egg hunts at 9 a.m. and 1 p.m. with a designated photo station with the Easter Bunny. Starting at 10 a.m., children can visit “Sammy’s Tree House” for glitter tattoos and holiday-themed arts and crafts. At noon, the resort’s team of Flow Pros will showcase their incredible surfing skills on the FlowRider wave simulation machine. Additional evening festivities include family charades, s’mores making and a movie under the stars.

Guests who book their stay by April 17, 2025, for stays through May 22, 2025 will receive 15 percent off room rates.
