Wild Blue Crab Cake with Michael’s Home-Grown Meyer Lemon with frisée and roasted corn relish
Fennel Smoked Salmon with Semolina Pancakes and Tiny Greens with roasted pepper crème fraiche, crisp capers, tomatoes and red onion
Braised Beef Short Rib with Cabernet Sauce with vanilla-scented potato puree, corn jus and crispy potatoes
Michael’s Caesar Salad With Polenta Croutons And White Anchovies with romaine, creamy parmesan dressing, pear tomatoes and maple bacon
Lobster Bisque with crustacean oil, Gulf shrimp and chives
Main Entrée, choice of one:
Garlic and Herb Crusted Rack of Lamb with parmesan polenta, braised fennel, tomato confit garlic and tarragon jus
Sweet Corn Risotto with roasted baby carrots, small cabbages, cotija cheese and sauce verde
Florida Grouper With Dill Spaetzle with Meyer lemon emulsion, cured tomatoes, wilted spinach and crisp capers
Blackberry and Apple Glazed Pork Tenderloin with butternut squash puree, roasted brussels and cotija cheese
Grilled Tenderloin of Beef and Grilled Prawns with citrus emulsion, potato puree, grilled broccolini and red wine jus
