On Friday, Jan. 24, 2025, this incredible pairing dinner will be hosted by Drew Mayville, master blender for Sazerac, who will pour and discuss five very allocated bourbons and whiskeys, including two BTAC expressions, all paired with an incredible multi-course meal artfully crafted by Phoenix City Grille’s own Micah Wyzlic.
The evening begins with The Whiskey Rebellion welcome cocktail featuring PCG’s Private Barrel Select Stagg, Brucato Orchards Amaro, Cocchi Vermouth Di Torino, orange bitters and St. Elizabeth Allspice Dram rinse. The dinner will commence with the following menu and pairings:
Smoked Bourbon Clam Chowder — Little neck clams, candied bacon, Yukons, fresh herbs and chive tartlet featuring Blanton’s Straight From The Barrel, 128.7 proof – 2022 barrel #1619
Bacon “Wrapped” New Bedford Sea Scallop — Corey’s seven-spice cured pork belly, Freddy’s root beer gastrique, vanilla-scented celery root puree, bourbon beurre blanc and arugula fennel salad featuring William Larue Weller, 124.7 proof – 2022
Duck Confit with bourbon barrel-aged maple “lacquer,” butternut squash puree, blueberry port reduction, watercress and local citrus featuring Double Eagle Very Rare, 101 proof - 2024
Intermezzo — Lemon Sorbet
Wagyu Strip Loin Steak with potato galette, torched foie gras, chanterelle bourbon demi-glace and truffle zest featuring Last Drop Release #28, 121.4 proof – 2022
Deconstructed Tiramisu with Ghirardelli mousse, ladyfingers, bourbon cream mascarpone quenelle, chocolate espresso bean and bruléed citrus featuring Thomas Handy Rye Whiskey, 124.9 proof – 2023
Mayville is the master blender and director of quality at Sazerac. He joined the company at its Buffalo Trace Distillery location in 2004. He has more than 40 years of experience with some of the largest companies in the beverage alcohol industry, including nearly 23 years with Seagram’s. At Sazerac, Drew has worked hands on with all the award-winning products produced at Buffalo Trace in addition to the other highly acclaimed spirit categories of the company.
The cost of this pairing event is $600 per person, plus tax and 20% gratuity.
