This Easter weekend, COURSE presents an extraordinary dining experience—a meticulously crafted eight-course tasting menu designed by "Chopped" champion Chef Cory Oppold and his award-winning culinary team. Available for three days only (April 18-20), this exclusive Easter tasting menu ($175 per person) is the perfect opportunity to experience Chef Oppold’s innovative approach to seasonal fine dining. A refreshing Salade Verte follows, featuring oak leaf, snap peas, green tomato, and avocado for a crisp, garden-inspired bite. Next, the Acini di Pepe Pasta offers a velvety balance of asparagus, mushroom, parmesan, and lemon, leading into the expertly prepared Chilean Sea Bass, accompanied by a vibrant spring succotash of corn, fava bean, okra, and bell pepper. For the heartier courses, guests will savor Pork Cheeks “prepared like ham,” showcasing classic Easter flavors reimagined with cabbage, mustard, gruyère, and leek. The Lamb Loin, rich with fennel, carrot, wheat berries, and cipollini onion, is a fitting tribute to the season’s most traditional centerpiece. To conclude, an indulgent Carrot Cake with cream cheese, walnut, raisin, and white chocolate offers a nostalgic yet refined finish, followed by delicate mignardises, including a rose and raspberry macaron.
