The evening begins with a trio of playful passed bites, each thoughtfully paired with the bright, expressive character of Uka sake. Guests will savor a sake cured salmon cornette kissed with yuzu kosho and chives, a dramatic flambéed oyster enriched with XO mignonette and sansho pepper, and a whimsical Kejora sweet potato bomboloni glazed with aged balsamic.

A warm interlude follows as Piper’s kitchen presents an indulgent steamed bun with caviar and bone marrow butter, bridging comfort and luxury.

The progression continues with a geoduck crudo, accented by rhubarb, green strawberry umeboshi, and a refreshing tomato–olive oil granita—an exploration of oceanic delicacy and vibrant acidity.

For the second course, guests enjoy charcoal grilled sable, elegantly paired with caviar, roasted leeks, and a shio koji beurre blanc that harmonizes beautifully with Uka’s nuanced sake profiles.
