Many families in New Mexico and Southern Colorado have a family recipe that has been handed down for generations. The celebrated biscochito is very personal and cherished. In fact, in 1989 New Mexico House Bill 406 made this cookie the first official state cookie in the United States. That is how special this cookie is!
The original roots of the biscochito date back to the 16th century in what is now New Mexico when the first Spanish colonists arrived in what was then known as Santa Fe de Nuevo México. In Spanish, biscochito is the diminutive form of bizcocho, which means “biscuit.”
While similar to the Spanish mantecados (a shortbread made with pig fat) and to other recipes froms Pueblo Indians, over the centuries the biscochito evolved into what is now an original New Mexican recipe. The cookie is a blend of Native American Pueblo, Spanish, and Mexican influences.
This workshop will be instructed by Renee Fajardo, Charlene Garcia Simms, Bertha Gallegos, and Bonnie Medina, all of whom were featured in the Tummy Tales series book "Biscochitos for Mis Jitos" in 2018, edited by Ed Winograd.
This workshop will begin with a brief history of the cookie's origins, a group discussion of your own connections to the cookie, and an excerpt from Biscochitos for Mis Jitos & Other Tummy Tales. We will discuss the cookie's ingredients and the personalized use of different liquids used by families. A tasting of two to three variations of prebaked biscochitos will follow.
Then learn how to make the dough for these beloved cookies from scratch, just like many families have done for generations. You’ll roll out your dough, cut your cookies, and take home a batch of dough to cook at home. We’ll also send you home with a recipe card and a sampling of the premade biscochitos.
