When Chef Campigotto sought to introduce this iconic dish to the States, he turned to One Off Hospitality’s Executive Chef and Partner, Paul Kahan, to make it happen.
What is Cassoulet?
Each cassoulet pot is layered with duck legs, stock, white beans, pork sausage, and pork bones, topped with a final layer of beans. The dish is then baked for hours, with stock added every half hour, resulting in tender meat and perfectly roasted, crunchy beans.
